Two Ways to Spice Up Spaghetti Night at the Campsite — Colonia Del Rey RV Blog

Pasta is one of the great RV staples — quick to cook, easy to customize, and endlessly versatile. But there's no reason spaghetti night has to mean the same jar of sauce every time. These two ideas will transform your next pasta dinner into something worth getting excited about, whether you're cooking in the RV kitchen or on a camp stove at Colonia del Rey RV Park.

Easy Aglio With Canned Clams

This recipe tastes like you just spent $18 on a pasta dish at a fancy restaurant — you will definitely want to make it again. The best part: it's made almost entirely from pantry staples.

Ingredients

1 box pasta of your choice
1 can clams, drained
¼ cup chopped garlic
Half a stick of butter
¼ cup olive oil
¼ cup white wine
¼ cup fresh chopped parsley
Pinch of red pepper flakes

Method

Cook pasta according to directions.

While pasta is cooking, heat your pan up and melt the butter along with the olive oil. Keep the heat on medium. Add the garlic and stir, cooking for a couple of minutes until fragrant.

Add the red pepper flakes and turn the heat up. Cook for another minute then add the white wine. Allow this to simmer for a couple of minutes then add the clams and parsley.

Toss in your pasta and serve with some shaved parmesan!

A Few More Ideas to Upgrade Spaghetti Night

Brown your meat with a splash of red wine and let it cook off before adding the sauce — it deepens the flavor dramatically.

Add a parmesan rind to your jarred marinara while it simmers. This old Italian trick turns basic store-bought sauce into something that tastes slow-cooked.

Top with fresh basil instead of dried. The difference is remarkable and a small bunch of fresh basil travels well in the RV fridge for a week.

Sometimes the best campsite cooking is about knowing one small trick that turns something ordinary into something memorable.
