Two of the most universally loved foods — pizza and pasta — combined into one bubbling, cheesy casserole. This is exactly the kind of dish that makes everyone happy at the campsite, including the picky eaters. You can customize it with whatever pizza toppings your family likes, it makes great leftovers, and you can even assemble it the night before and bake it fresh the next day. A go-to at Colonia del Rey RV Park potlucks.

Pizza Pasta Casserole

This recipe combines two of our favorite foods: pasta and pizza! The ingredients can really vary on what you like on your pizza, so feel free to change or add any of the ingredients.

Ingredients

1 box penne or ziti
1 jar marinara sauce (your favorite, or whatever is in the pantry)
2 cups shredded mozzarella
⅔ cup pepperoni slices, cut in half
⅔ cup banana peppers, roughly chopped
½ cup sautéed mushrooms

Method

Cook the pasta according to the box directions.

Combine pasta, sauce, pepperoni, banana peppers, mushrooms, and 1 cup of the cheese in a large baking dish.

Lightly cover with foil and bake at 375°F for 25 minutes.

Uncover and top with remaining cheese and bake for another 15 minutes or until the cheese is melty and golden.

This dish is great because you can make it the night before. Just remember that cooking time will be close to double when going from cold.

Try adding Italian sausage, black olives, or roasted red peppers to customize it to your taste. A sprinkle of fresh basil on top right before serving and a side salad turns this into a complete campsite dinner that feels anything but roughing it.
