Pizza nights don't have to end just because you're on the road. In fact, some of the best campfire meals are inspired takes on home favorites — and this one takes the pizza concept somewhere even better. If you're setting up camp at Colonia del Rey RV Park or anywhere along the Gulf Coast, fire up the grill and try these.
Grilled Meatzzas — Meat Pizza!
In the mood for pizza, but not the carbs? "Meatzzas" are a great alternative — you get the meat, cheese and sauce with none of the bread. You can even add veggies on it if you want! If the weather is poor, you can bake these and get the same tasty results, but grilling them gives you the flavor from the char and the fire. You can also make these in individual serving sizes! Make extra meat "crusts" and store them in the freezer for next time — they work as burgers too.
Grilled Meatzzas
Yield: 4 servings
Ingredients
1 lb ground beef
8 oz shredded mozzarella
1 jar pizza sauce
Any veggie you might want
Salt and pepper to taste
Equipment
Grill grate
Spatula
Spoon
Foil or a fire-proof lid
Method
First, form the patties. Divide the beef into 4 sections (4 oz each). Form into thin patties with your hands or a burger press. Season with salt and pepper.
Once your grill grate has been heating, grill your patties for about 5 minutes and then flip. Carefully spoon sauce over them and top with cheese and veggies. If you do veggies, put them under the cheese so they melt onto the patty. Lightly cover with foil or with a lid and cook for another 5 minutes or until the patty is done.
If you want the bread crust, just heat up some premade crusts over the fire. Cut into pieces to fit the meatzza.
