Thanksgiving on the road is one of the special pleasures of the RV lifestyle. Whether you're celebrating with family at Colonia del Rey RV Park or sharing the holiday with your neighboring campers, cooking a big meal in the RV kitchen is completely doable — and the day after, the leftovers become something even better. This turkey shepherd's pie uses everything from the Thanksgiving spread and transforms it into a completely different, completely delicious meal.

Leftover Turkey Shepherd's Pie

This recipe is super easy and super yummy. You and your family will have no idea it was made from leftovers!

Ingredients

2 cups shredded turkey
2 cups green bean casserole
2 cups stuffing
1 cup corn or creamed corn
2 cups thinned gravy
Extra turkey giblets if desired
1 bag frozen carrot, corn, pea blend
3–4 cups mashed potatoes
Shredded cheddar cheese

Directions

Preheat the oven to 375°F.

In a large casserole dish, mix all ingredients except the mashed potatoes.

Spread the mashed potatoes over the top of the mixture and sprinkle cheddar cheese over the top of the potatoes.

Bake in the oven for about 30 minutes or until bubbly around the edges and hot in the center.

Serve with extra gravy or a side of warmed cooked cranberry gel.

This dish actually tastes better than it sounds — the stuffing absorbs the gravy and creates a rich, savory base that the mashed potato crust seals in. The cheddar on top gets golden and a little crispy, which is the best part. Make it for lunch the day after Thanksgiving and you'll have a whole new favorite holiday tradition.
